Bread. I love bread.
I grew up with the most delicious bread in Germany and couldn’t imagine giving it up.
Yet I know that eating gluten is known to not be the best thing because our bodies don’t digest gluten very well.
Some people don’t seem to be affected, but more and more people are finding out that they need to restrict gluten or even follow a totally gluten-free diet.

We have noticed recently that my husband sneezed and get very congested every time after eating bread or cake, so we are experimenting with incorporating more gluten-free bread in our diet at home.
Thanks to Udi’s gluten-free products, we don’t feel like we are missing anything. Udi makes wonderful bread, cookies, granola, and even pizza crust.
Here is our favorite way to eat Udi’s gluten-free cinnamon raisin bread. I only make it on the weekend, so it always feels like a treat:
Gluten-Free French Toast With Xylitol Strawberry Syrup:
- 6 slices of Udi’s gluten-free bread (serves 3)
- 1 pinch salt
- 2 eggs and 2 egg whites
- 1/2 tsp pure vanilla extract
- optional: 2 packs of Xylitol sweetener
Preparation time: 5 minutes
Cooking time: 12 minutes
I just mix the eggs, egg whites (to lower the cholesterol amount), vanilla and Xylitol together, heat up the pan, spray it with oil, and add the bread slices dipped in the batter into the pan. They only take about a minute on both sides to be ready.
I’m a huge fan of Xylitol (it tastes like sugar but has less calories, it doesn’t cause cavities or raise your blood sugar) so we use Strawberry Xylitol syrup on our French Toast.
This French toast is so delicious, you’d never know it’s gluten free! My son has never noticed the difference, and he’s a picky eater.
