I had three bananas begging for me to use them for something instead of throwing them out, so I reached out to my Twitter friends and posted a cry for help: I needed a good banana bread recipe!
After few suggestions came in, I deciding to make Chasing Tomatoes’ Banana Bran Muffins. The recipe looked very easy and I miraculously had all the ingredients in the house — even the wheat bran. I doubled the recipe so I could use all the ripe bananas I had.
Banana Bran Muffins Ingredients:
2 egg, lightly beaten
1 cup milk
1/2 cup canola oil (I substituted half of this with apple sauce)
1 cup sugar
2 cup mashed ripe bananas (about three bananas)
2 tsp vanilla
2 cup whole wheat flour
2 tsp baking soda
2 tsp baking powder
2 cup oat or wheat bran
2 cup raisins (optional)
Directions:
In a big bowl, stir together the flour, baking soda, baking powder, and wheat bran.
In a separate bowl, whisk together the egg, milk, canola oil (and apple sauce), sugar, bananas and vanilla. Mix until well combined.
Pour into the dry ingredients and stir with a spoon until just moistened. Fold in raisins, if you are using them.
Line a muffin tin with paper cups and fill each about 2/3 full.
I added a few chocolate chips and walnuts on top. Get creative!
Bake at 400 F for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Makes about 24.
