I love Trader Joe’s grocery stores — their products are fabulous, cost less, and they carry imported German cookies and chocolates I grew up with.
But my favorite part is that all “Trader Joe’s” brand products contain no artificial colors, flavors, or preservatives, no MSG or trans fats, and are sourced from non-genetically modified ingredients. So I can buy non-organic food at Trader Joe’s and be assured that I’m not buying GMO food, which is really important to me.
I used to get most of our food at the Trader Joe’s down the street when we lived in Los Angeles. Our Trader Joe’s is further away here in New York, but I still buy about half of our food there.
The other day I was inspired to cook myself a healthy lunch after coming home from working out. I’m working out twice a week now and trying to drink more water and eat more protein to lose the extra 10 pounds I put on last year.
I wanted to cook something I could make quickly that was high in protein but vegetarian.
Vegetarian Meal With Trader Joe’s Organic Baked Tofu
All I did was combine two Trader Joe’s items — their frozen Quinoa Duo…
…and their firm, ready-to-eat Organic Baked Tofu.
I used a little bit of coconut oil in the pan, cut the tofu in cubes, and browned them first. Then I added the quinoa.
Because the tofu is already marinated, I didn’t add any salt or spices.
After I put it in my favorite bowl, I added a few slices of avocado, and voila — I had a healthy, vegetarian meal after only ten minutes. My kind of cooking :)
It was delicious!
