Why is it so important that kids to get Omega-3 and DHA in their diets? DHA provides a nutritional boost for infants’ growing minds and bodies, supporting brain and eye development and function. To be honest, I have been really bad about taking my DHA supplements and also haven’t consistently given L his fish oil (in juice). But now I don’t have any excuse anymore and we can kiss smelly fish oil good-bye!

I also started using Horizon eggs and DHA milk to make flaxseed meal pancakes or healthy muffins, like my chocolate chips banana bran muffins. By making just that small change, he is eating healthier and doesn’t even know it.
I adjusted my recipe for banana bran muffins to make these Omega-3 powerhouses!
Chocolate Chips Banana Flaxseed DHA Muffins
Ingredients:
2 Horizon Organic Omega-3 eggs, lightly beaten
1 cup Horizon Organic milk with DHA
1/2 cup canola oil (I substituted half of this with apple sauce)
1 cup Xylitol (or sugar)
2 cup mashed ripe bananas (about three bananas)
2 tsp vanilla
2 cup whole wheat flour
2 tsp baking soda
2 tsp baking powder
2 cups flaxseed meal (or oat or wheat bran)
2 cups chocolate chips (or raisins, walnuts or other nuts, optional)
Directions:
- In a big bowl, stir together the flour, baking soda, baking powder, and flaxseed meal.
- In a separate bowl, whisk together the eggs, milk, canola oil (and apple sauce), sugar (or Xylitol), bananas and vanilla. Mix until well combined.
- Pour into the dry ingredients and stir with a spoon until just moistened. Fold in raisins, if you are using them.
- Line a muffin tin with paper cups and fill each about 2/3 full.
- I added a few chocolate chips and walnuts on top. Get creative!
- Bake at 400 F for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Makes about 24.
