This is not a recipe for “mock” mashed potatoes made with cauliflower — this recipe combines both: cauliflower and potatoes.
Cauliflower Mashed Potatoes Recipe With a Twist
Mashed potatoes without potatoes? Not in my kitchen.
I love, love, love potatoes. I ate them almost every day growing up in Germany, mostly just boiled in salt water.
Combining both cauliflower and potatoes makes a yummy dish that’s also healthy because you are substituting half of the potatoes for cauliflower.
Well, substitute sounds like you are giving up something, which you aren’t here: you are adding a vegetable and cutting some calories.
Cauliflower is low in calories, and adds many vitamins, indole-3-carbinol, and sulforaphane that help prevent being overweight, diabetes and offer protection from several cancers.
On my last shopping trip, I picked up a head of organic cauliflower, and since I also had potatoes, I made my life easy: I cooked both, and made these healthy cauliflower mashed potatoes, with a little twist.
Here is the super-easy recipe. These mashed potatoes are also great for little kids because it’s mashed food.
Ingredients for Cauliflower Mashed Potatoes
- 1 head of cauliflower
- 4 medium Russet potatoes
- 2 tsp of salted butter
- 1/2 cup of skim or 1% milk
- salt for the water
- optional: avocado and a pinch of curry powder
Directions:
Wash the cauliflower and potatoes, peel the potatoes, and cut all in bite-size pieces.
Add to saucepan, cover cauliflower and potatoes with water, and add a bit of salt. Cook them until soft, about 12 minutes, and then drain.
Add the butter and milk, and mash them.
I like lumpy mashed potatoes, but you could add a bit more butter and milk if you like yours creamier.
My little twist: I added a few slices of avocado and a bit of curry powder to my mashed cauliflower potatoes.
There you go: an easy side dish with healthy cauliflower, or in my case, since I don’t eat meat, this is my main dish.
It’s so yummy, I easily eat two portions. If I wanted to add protein, I’d eat this with some beans, cottage cheese, or broccoli.
