Easy Recipe for Healthy Turkey Stromboli

I bake the best zucchini bread, but I am not much of a cook. Truth be told, I use the microwave a lot. But when I saw the picture of this “Easy Turkey Stromboli” in my Parents magazine (April 2009), and the picture of the ingredients I need to buy, I though, “I have most of this, I can do this!” (I am a visual learner — if it wouldn’t have been for the picture of all the ingredients, I probably would not have tried this recipe).

So I bought the few items I didn’t have in the house, like the Pillsbury pizza crust, and went to work. And I have to tell you, it was a success! This was so easy and fast to make and really yummy — and much less costly than the stromboli Don likes to bring home from the pizzeria.

1 lb. turkey-breast tenderloins, cut into strips (I used chicken tenders instead)
1 pkg (10 oz.) frozen, chopped spinach, thawed and well drained
1 pkg (11 oz.) refrigerated Pillsbury thin crust pizza crust
1 cup pasta sauce, divided (I added more)
1/2 cup shredded Colby & Monterey Jack cheese blend (I used more)
2 tsp low-fat milk
2 tsp grated Parmesan cheese

1. Heat oven to 400 degrees. Boil a cup of water on medium in a large skillet; add turkey and return to boiling. Cover; simmer 8 to 10 minutes. Allow to cool slightly, then chop.

2. Unroll crust into a 14″x12″ rectangle on a parchment-lined baking sheet (I didn’t have parchment paper, I am not a fan of it, so I just greased my pan). Spoon half the sauce down the center, lengthwise, leaving 3″ on either side. Layer spinach, turkey, and cheese over sauce. Cut 12 strips on both sides of crust. Fold strips over filling, so they overlap. Brush with milk and sprinkle with Parmesan cheese. (I didn’t cut the strips, I just folded the dough and made it a big roll.)

3. Bake for 12 minutes (I cooked mine for about 16, until it was nice and brown). Serve with more sauce.

For those interested, if made to their specifications, the nutritional info is as follows:
Per serving (makes 6 servings):
305 calories, 27g protein, 8g fat, (3g sat. fat), 31 carb, 2g fiber, 157mg calcium, 3mg iron, 553mg sodium. The spinach gives this all the vitamin A kids need in a day.
